Breakfast: ½ a cantaloupe
Lunch: Smoothie – 2 frozen bananas; ½ – ¾ c. raw cashew
Dinner: Hummus – 2 zucchinis, ¾ c. tahini, 2 tbsp lemon juice, 2 garlic cloves (consumed 1/3 of this); 6-9 carrots; 1/3 c. okra
I was really hungry at lunch and after the initial smoothie, I wasn’t really feeling fruits or veggies. That really eliminated my choices and I ended up eating a lot of nuts. This was probably good for getting my calories up, but I do think it was too many nuts. It was probably closer to ¾ a cup, but could have been more.
The hummus was quite good at first, but then the tahini aspect of it seemed quite hefty and the more I ate, the less I liked it. Don’t get me wrong – the taste is good for sure. I experienced the same thing with the lettuce wraps I was making as you’ll notice the first one had tablespoons of tahini and the last one only has teaspoons. I also had a slight tummy ache after dinner for a few hours. On a better note, okra was a new thing, and at first seemed kind of tasteless, but then I could taste a type of sweetness to it (just a hint) and it was actually quite enjoyable, though really not a substantial food.
Four days in and all is coming along just swimmingly.
